Salmonellosis – Caution with raw foods!

Salmonellosis is caused by bacteria from the Salmonella group. The cause of infection is often the ingestion of unclean drinking water or a lack of hygiene measures in food preparation. Salmonella can be found in animal products such as eggs, meat, milk and shellfish. Thus, salmonellosis is classified as a food infection or food poisoning.

What are the symptoms? 

Often salmonellosis takes a harmless or even asymptomatic course. This depends on the ingested number of bacteria and the immune system of the respective person. If symptoms occur, they are usually: 

  • Nausea and vomiting 
  • Diarrhoea 
  • Fever 
  • Circulatory problems 
  • Abdominal cramps 

The first symptoms of a salmonella infection appear within a few hours to three days (in exceptional cases up to a week) after eating infected food.

If Salmonella infection is suspected, the diagnosis is made based on the medical history with the symptoms listed above. The pathogen is detected by means of a stool sample.


In most cases, it is sufficient to restore the water and electrolyte balance. A drink of ½ litre each of apple juice and mineral water, one teaspoon of salt and two tablespoons of dextrose can help. You should only take Antibiotics in severe cases because they can form the excretion of bacteria and resistance.

Prevention is still the best measure! Here’s what you can do about it yourself: 

  • Wash hands thoroughly with warm water after using the toilet and before preparing food 
  • Do not interrupt the cold chain in the case of perishable foods 
  • Thoroughly clean kitchen surfaces and utensils regularly 
  • Use only fresh products to prepare dishes containing raw eggs (e.g. mayonnaise); consume these dishes as quickly as possible 
  • Store eggs, meat and sausage products separately from foods such as fruit and vegetables 
  • Cool dishes that are not consumed immediately and place them in the refrigerator 
  • When reheating food, cook it well again 
  • Defrost frozen food overnight in the refrigerator 
  • Empty thawing water from frozen meat into the sink and rinse hot afterwards 

These measures are essential for children, the elderly, and people with weakened immune systems, as they are particularly likely to get ill.
